Gelato

Gelato Bases

Bases for cold or hot processing are available from PreGel. All bases for cold processing can be used for hot processing too. The total base featured here is a complete product suitable for both fruit and milk gelato, giving an extra creamy texture without the need of stabilizers or emulsifiers.

Fuss-Free Sprint Products

Sprint products provide the convenience of containing all the base and flavours present in balanced proportions to give a premium quality gelato by adding only milk or water.

Diabetic Products

PreGel Soya Base makes it possible to produce excellent gelato without using any dairy products, animal fats, or saccharose sugar. PreGel soya is not subjected to genetic engineering. Various fruit gelato can be made by adding fresh fruit and by adding some recommended traditional pastes, other completely sugar-free flavours can also be made. The following recommended PreGel traditional pastes do not contain saccharose sugar nor milk by-products: Cacaopat (Chocolate without sugar), Hazelnut, Hazelnut Cream, Regina Hazelnut, 100% Pure Sicilian Pistachio.

Fruit Pastes

First invented by PreGel in 1970, PreGel Fortefrutto® pastes are still considered the utmost quality products. Use PreGel Fruttosa or Totalbase bases for the most successful fruit gelato. Fortefrutto fruit pastes are also used in a proportion of 30 glkg as strengtheners for gelato made with fresh fruit.

For even higher fruit content, use PreGel's Tantafrutta line of fruit pastes. These are higher concentrated fruit pastes containing luscious fruit pieces.
