Instead of just buying these items ,learn the techniques behind making them.
3 recipes from our selection will be taught during each lesson. If time permits, Chef Judy may do a demo for another recipe.

Class Recipes
Tau Sar Pia, Hup Toh Soh, Meen Chien Kueh

  • Flakey Tau sar Pia - Learn to cook the green bean filling as well as the flaky pastry during the lesson
  • Meen Chiang Kueh - This is a great favourite. A fragrant ,peanut filling\coconut filling is sandwiched between Soft and slightly chewy dough
  • Hup Toh Soh - Crispy Chinese Walnut Cookies
  • Mee Sua Kueh - so easy to make ,but oh so delicious!
  • Mua Chee  - Childhood memories that make us smile
  • Soon Kueh - Learn to make the soft,chewy skin and cook the scrumptious turnip filling!
  • Chwee Kueh   -soft and topped with a great sweet turnip  filling ,cooked in the traditional way
  • Ah Ma’s Special Chilly sauce - a must have !!!!
  • Chee Cheong Fun - Learn to cook the silky ,smooth dough as well as the various fillings, and sauce!


Ang Ku Kueh

These ang ku kuehs  are eversoft and delicious! And  if you follow Chef Judy’s instructions carefully, they remain soft and delicious  throughout the day. We share with you all the secrets of making the various types of skins,how to cook the traditional coconut fragrant oil  that is added to the dough so that they have a special fragrance  and all the fillings.3 types of ku kuehs will be covered:


Ang ku Kueh with green bean filling - These ku kuehs are attractive and tempting and can be shaped into traditional,flat tortoise shapes or moulded  into a cone shapes( the traditional shapes that are distributed to friends and relatives when a baby boy is born  during the one month celebrations.  They contain a smooth,green bean filling that is not too sweet. We also reveal how from this basic recipe you can also make your own durian filling.

Pandan Green Ku Kueh with coconut filling - Learn to cook the fragrant filling as well

Black ku Kueh  with Peanut filling - Black sesame  seeds are roasted, ground and added to the dough for the skin. No artificial colouring used.

 


Yu Cha Kueh

Yu cha kueh, Hum Chim Peng and Bay Huei Chee( Butterfly dough) are local breads and part of our local heritage. In this lesson, we will explore and make these three very popular local items.
Learn the techniques of preparing the dough,shaping it and how to fry them.


Bah Zhang - Tie Your own Dumplings

A most interesting and fun filled time when you get to tie and bring home the dumplings that you tied! Learn the art of tying your own dumplings!

Nonya Dumplings -A family recipe that has proven to be immensely popular!!!They are fragrant and scrumptious with just the right balance of sweetness and saltiness. And we show you how to incorporate the natural blue colour dye obtained from the bunga telang flower so that it has the distinctive blue stamp of the Nonyas!

Hokkien Dumplings -Chunks of delicious meat marinated in peppered aromatic sauce with fragrant chestnuts and enclosed in fragrant glutinous rice.

Crystal Dyumplings(Kee Changs)- These are served with a gula melaka sauce or kaya. A must have during the dumpling festival.
